My mom made this cake for every gathering. It’s an older recipe and is a sweet pound-like cake made without butter, thus the “poor man’s” title. The top gets a crisp crackled golden brown crust and the inside is tender. An oldie but goodie!
Preheat oven to 350ºF.
Mix all ingredients in a large mixing bowl and beat for 5 minutes until well mixed. Pour batter into a lightly greased and floured tube pan. Bake approximately 70 minutes or until an inserted toothpick comes out clean.
Cool cake on a cooling rack then flip out of the pan. Best served at room temperature or slightly chilled.
