Description

Vanilla lime pound cake with a vanilla lime glaze, perfect for those citrus fruits in season.

Ingredients

  • 3 whole Eggs
  • 3 Tablespoons Milk
  • 1 Tablespoon Vanilla Extract
  • 1 whole Vanilla Bean - Contents Of
  • 1-½ Tablespoon Lime Zest (about 3-4 Medium Limes)
  • ¼ cups Freshly Squeezed Lime Juice
  • 1-½ cup All-purpose Flour
  • ¾ cups White Sugar
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Salt
  • 1-½ stick Butter, Softened
  • _____
  • FOR THE GLAZE:
  • ¼ cups Lime Juice
  • 1 teaspoon Vanilla Extract
  • 1 Tablespoon Heavy Cream
  • 1 cup Powdered Sugar
  • 1 teaspoon Lime Zest

Preparation

For the cake:
Preheat oven to 350F.

In a small bowl, combine eggs, milk, vanilla extract, vanilla beans, lime zest and lime juice. Whisk together.

In the bowl of your electric mixed, combine flour, sugar, baking powder and salt. Mix until combined. Add butter and mix until batter starts to come together. Add half of the egg mixture and mix on medium for 30 seconds. Add the remaining egg mixture in two parts, scraping down the sides of the bowl and mixing on medium speed for about 30-45 seconds each.

Cut a piece of parchment paper to fit in the bottom of your loaf pan and butter it. Spray the entire loaf pan with baking spray and lay the parchment paper down, buttered side up. Pour the batter in the loaf pan and bake for 50-55 minutes. If cake gets too brown on top, lightly tent it with foil. Let cool before glazing.

For the glaze:
Whisk all ingredients together to form a glaze. Add more liquid or sugar to get desired consistency. Pour over cooled pound cake.

I made this a while back, and it was very tasty! Unfortunately, I think I ate three fourths of it, and the other members of my family only got one slice.

I made this Monday and it is wonderful. I did not have a vanilla bean because they are like $12 and up. Not happening but I did add a little extra vanilla and it came out great. Yum Yum this is a keeper. I especially liked the icing because it was real runny and covered the entire cake and landed all around the bottom like rum cake does. You can peel it off with the knife and add it to your cake as you eat it – OMG good.

I am making this tonight!!! However my small town store doesn’t carry Vanilla Beans, so I am going to add a little more Vanilla in instead. I have a large group of teenage boys coming over for a football party my son is having, this may be to good to share…..

YUM! Another delicious recipe from HowSweetEats, thank you! Really terrific. Would be great with tea and friends :) My glaze didn’t sink in…it was the perfect amount too.

This pound cake will make you want to throw a garden party, just so you can feature it as the dessert!!

Wonderful! Used limes from my tree. The lime flavor is subtle, but smooth. If one really loves limes, they could add a bit more lime juice (not too much, don’t want to mess with the batter’s consistency) and some more zest, but for us, it was just right! The cake absorbs the glaze, which was fine for us at home, but for plate presentation, if I had guests, I would wait until serving to pour glaze. Going to the store today for strawberries to serve over the slices for dessert tonight (if I don’t eat it all up today)! Thanks!
