The beauty of mom’s bell pepper relish isn’t just the color. It’s very affordable to make, keeps for weeks and so versatile.
Melt butter with oil in a heavy large skillet over medium-high heat. Add onion; sauté until golden, about 5 minutes. Add peppers; sauté until just tender, about 3 minutes. Add olives, mustard and garlic. Stir 1 minute.
Remove from heat and season with salt and pepper, if desired. Bring relish to room temperature before serving on French bread toasts.
Also can be used to top beef or chicken, mixed with pasta and makes a beautiful gift.
