Mince the garlic and lightly sauté in a dash of olive oil until golden. All all other ingredients (except cream or milk) into a heavy-based pot and bring to a boil, turn down the heat and simmer for 35 minutes. Once cooked, blend the soup to a creamy consistence and then stir in cream/milk. Enjoy!
