Part sweet potato fry, part hush puppy, part cheesy popper, completely irresistible.

Fried okra is a Southern classic and everyone prepares it differently. There are a ton of different recipes and ways to cook okra but this is a simple recipe with a few ingredients and it’s the way I cook it. No dredging in egg then corn meal or deep frying. You just need okra, corn meal, salt and pepper, a little cooking oil, a hot skillet and you are set!

I made these tonight and they were wonderful, especially when served with tomatoes and sour cream. I’ll be making these again soon.

Deeelish! These were super easy and a great way to use up zucchini. Healthier than potato pancakes, but tasted very similar. The insides of mine were a little soft undercooked but i think I need to squeeze out some moisture from the zucchini next time. Thanks, there WILL be a next time!

These were delicious, and got a high approval rating from my husband, who isn’t a huge vegetable fan (and is thoroughly sick of zucchini at this point. The recipe doesn’t mention squeezing out water, which is a hugely important step. Also, I added some additional spices (mostly turmeric). I’m not a fan of just using salt and pepper.

Thanks for noticing I forgot to mention giving your zucchini a little squeeze. I’ve fixed the recipe. Glad you’ve all liked it!

These were fabulous! My picky eaters just loved them! I added about 1/4 cup of shredded green pepper, along with some turmeric, celery salt, a clove of garlic and 2 tablespoons of flax to the recipe. Delicious! Thank you!
