Description

A dish that has a great Earthy taste and a perfect texture. This rice dish goes great with stuffed pork tenderloin.

Ingredients

  • 2 Tablespoons Olive Oil
  • ½ cups Onion, Diced
  • 1 cup Wild Rice
  • 2 cups Chicken Stock
  • ½ cups Craisins
  • ¼ cups Sliced Almonds
  • ½ teaspoons Cracked Black Pepper
  • ½ teaspoons Salt

Preparation

Begin by bringing a large saucepan to a medium heat. Add in the olive oil, then add in the diced onion and cook for a few minutes, or until the onion is nice and tender. Add in your rice, and mix well to coat the rice. Cook for about two minutes, then add in your stock. Bring this to a boil, then cover, reduce the heat to medium-low and cook for approximately 50 minutes, stirring once in between.

After 50 minutes, remove the pan from the heat and let it sit for another 10 minutes or so with the lid on.

Then, remove the lid, toss in the craisins and almonds, season with the salt and pepper, and serve.

The pairing of this wild rice with pork tenderloin is just a perfect marriage on the plate, and probably one that allowed me to keep a good hold on my wife! Enjoy.

Winner! I never liked wild rice growing up, but then again, my mother didn’t jazz it up at all. The combination of nuts and cranberries was just the ticket! Thanks for sharing.

A solid five mitt rating here. This will definitely be making the meal rotation. Aside from the fact that it takes an hour to cook, it was really really easy. I did make one minor change for my own preference. I used some long grain rice as well as the wild. Thanks so much for sharing.
