Description

Savory corn fritters, super easy to make for breakfast, lunch or dinner!

Ingredients

  • 1 can Corn Kernels
  • 1 whole Egg
  • 3 Tablespoons Flour
  • ¼ cups Grated Cheese
  • 3 Tablespoons Chopped Fresh Herbs
  • 2 cloves Garlic, Minced
  • ¼ teaspoons Crushed Red Pepper Flakes
  • 1 piece Small Onion Or Shallot Minced
  • 2 Tablespoons Olive Oil, For Frying
  • 1 Tablespoon Butter, For Frying

Preparation

Drain corn and put in a large mixing bowl. Add flour, egg, and cheese. (I use whatever I have on hand, chedder parmesan, asiago or mozzarella all work well. The same goes for the herbs—you can use a variety of parsley, thyme or oregano.)

Add the rest of the ingredients plus a pinch of salt and pepper and mix well. Moderately heat a nonstick frying pan; add a couple of tablespoons of olive oil and 1 tablespoon of butter, and scoop large spoonfuls of batter into pan.

Gently pan fry until golden, about 3 minutes each side. Serve with eggs for breakfast or salad for lunch or dinner.
