Description

Roasted sweet potatoes and onions, topped with feta cheese.

Ingredients

  • Butter For Pan
  • 2 whole Large Sweet Potatoes, Peeled And Chopped Into Cubes
  • 3 whole Yellow Onions, Sliced
  • 2 Tablespoons Olive Oil
  • Kosher Salt And Freshly Ground Black Pepper, To Taste
  • 1 Tablespoon Oregano
  • ½ cups Crumbled Feta Cheese (if You Like, You Can Add More Feta)

Preparation

Preheat oven to 450ºF. Butter a large baking pan or dish and set aside.

Add the chopped sweet potatoes, onions, and olive oil in a bowl and mix. Season with salt, pepper, and oregano. Mix together and place the sweet potatoes on prepared baking dish in a single layer.

Roast for 20 to 25 minutes, stirring once halfway through cooking, and cook until potatoes are fork tender.
Remove from oven and sprinkle with feta cheese.

Serve.
