Description

Got Summer Squash coming out of your ears in the Summer-time? These are awesome!

Ingredients

  • 2 cups Yellow Squash, Grated
  • 6 Tablespoons Flour
  • 1 teaspoon Salt
  • 1 whole Egg
  • ¼ cups Grated White Onion
  • ½ cups Vegetable Oil

Preparation

Squeeze grated squash to get excess water from it. Place in a mixing bowl and mix in remaining ingredients (except oil).

In a skillet add oil and drop the squash mixture by spoonfuls into oil over medium high heat. Cook until lightly browned. Drain on paper towels.

These squash fritters are great. I plan to add a little ground pepper to the mixture the next time I make these. They were eaten up before they even had time to cool a little.

These are so wonderful! I don’t have a traditional grater (why? I don’t know) so I just cut the squash into small julienne strips and they worked wonderfully. Very, very good! Thanks for sharing!
