Description

Forget the diet for this one, or use low-fat dairy products and not feel so guilty.

Ingredients

  • 6 whole Large Or 8 Medium Potatoes, Peeled, Boiled And Drained
  • 1 package (8 Oz.) Cream Cheese, Softened
  • 1 cup (8 Oz.) Sour Cream
  • ½ cups (1 Stick) Butter Or Margarine
  • 1-½ teaspoon Salt
  • 1-½ teaspoon Dried Dill Weed
  • ¼ teaspoons Pepper
  • 1 package (10 Oz.) Frozen, Chopped Spinach, Thawed And Very Well Drained (squeeze Out All Excess Water With Paper Towels)

Preparation

Preheat oven to 375º.

In a large mixing bowl, whip the boiled potatoes, cream cheese, sour cream, and butter until smooth.

Add all remaining ingredients and continue to beat until well mixed.

Spoon into a greased 2-quart casserole dish. Bake for 20 minutes.

Casserole can be prepared ahead and refrigerated, then baked just before serving. Be sure to leave out at room temperature for 30 minutes before baking.

*These ingredients can be cut back on slightly. That will cut back on some of the fat and also make for slightly stiffer potatoes.

I made this for Christmas dinner, doubling the recipe but otherwise following it exactly. To. Die. For. All the adults and children LOVED it, and I reheated the leftovers for breakfast the next day. This will be a staple for holiday dinners to come.
