A simple, no-frills Spanish rice recipe.
1. In a medium-sized pot, heat the olive oil (or your oil of choice). When hot, add the onion and rice. Cook, stirring frequently, until rice is light golden brown.
2. Add chicken broth and tomato sauce to the rice; stir to combine (this is the only time you’ll stir it). Bring just to the boiling point and immediately reduce heat to low. Cover and cook on low for about 20 minutes, or until all liquid is absorbed and rice is tender.
3. Remove from heat. Fluff with a fork before serving.

I agree! This tastes so good. I spent all day making pork tacos from scratch- and guess what everyone ate clean up?
This simple delicious rice. I added a whole slew of garlic because…why not

Just made this for about 30 people. I substituted white rice for brown because I had it on hand, and it turned out great! Everyone loved it and I will definitely be making this again.

My whole family liked this one, and it was very easy. Next time I might add some sauteed red or green pepper and some chopped fresh tomato just before serving (just to “fancy” it up.

Just a simple, good recipe – my husband even ate up the leftovers and he’s not much for rice. I’ll make it again.
