Paired with a simple ginger and garlic stir fry, this is one of my husband’s favorite meals!
Cook rice according to package directions, set aside.
Heat oil in a wok or large non-stick pan. Add garlic (use 2 large or three medium to small crushed cloves) and cook for 30 seconds to one minute (do not allow garlic to brown!).
Add rice, stirring to mix with garlic and coat with the oil.
Crack two eggs on top of rice, wait one minute, then stir through until eggs are cooked.
Add green onion (if one bunch is too much green onion for you, add less if you’d like). Stir until green onion is heated.
Add soy sauce until rice takes on a golden brown color. Add more soy sauce to taste. Remove from heat and enjoy!
