In a wok or skillet, add olive oil and shallot. Cook until tender, about 2 -3 minutes. Add snow peas and zucchini, cook for about another 3 minutes, and then add shrimp and a dash of pepper. Cook until shrimp is no longer pink, about 2 to 3 minutes longer.
Serves 1 or 2 as a side dish.
