Description

Lime and cumin-flavored rice and black beans, garnished with cilantro.

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 whole Yellow Onion, Finely Chopped
  • 2 teaspoons Cumin
  • 2 Tablespoons Thyme
  • 2 teaspoons Paprika
  • 3 cups Chicken Broth
  • 1-½ cup White Rice
  • 1 can (15 Oz. Can) Black Beans, Drained
  • 1 whole Lime, Juiced
  • Chopped Cilantro, For Garnish

Preparation

Heat a medium pot over medium heat. Add 1 tablespoon extra-virgin olive oil and chopped onion. Saute 3 minutes, then season with 2 teaspoons cumin, thyme, and paprika. Pour in chicken broth and raise heat to bring to a boil. Add rice and lower heat to a simmer when boil resumes. Cover pot tightly. After 12 minutes, stir in black beans and lime juice. Replace cover. Cook another 15 minutes. Turn off heat, season with salt and stir to combine then let stand until ready to serve. Sprinkle some cilantro over the rice as a garnish.

I made this last night with chicken fajitas and it was amazing! Most cilantro lime rice recipes I’ve tried are either way to lime-y or don’t have much flavor. But this was great!

I followed this recipe exactly. This just didn’t work for me. It was all a sort of mushy, thyme-y mess I wonder if 2 TB of thyme is correct? That’s a lot of thyme and not a lot of other spices. I added salt and pepper but we ended up tossing the leftovers. Of the 4 of us, nobody really liked it much.

This was FANTASTIC! It’s actually a PERFECT re-creation of a dish I had at a vegetarian restaurant called Chase’s Daily in Belfast, Maine last summer. I thought I would never get to enjoy it again now that I’m back in North Carolina. Thank you!!!

I liked the flavor this rice had. If I wanted to, I could spice it up a little with some cayenne pepper. The lime juice added at the end really took the flavor in the right direction.

Next time I make this I will probably add more beans, maybe double the beans.

I bet this would taste good with kidney beans too!
