Description

Kimchi is a Korean staple. Why not fuse it with an easy Asian staple—rice?

Ingredients

  • ½  Onion
  • 2 cloves Garlic
  • ¼ cups Frozen Mixed Vegetables
  • ½ cans Spam, 12 Ounce Can
  • ¼ cups Well Fermented Kimchi
  • 2 Tablespoons Sesame Oil
  • 2 cups Cooked Rice
  • 1 Tablespoon Kimchi Juice
  • 1 Tablespoon Soy Sauce Or Sempio Yoondu Seasoning
  • 2 teaspoons Sriracha
  • 2  Eggs, Beaten
  • Salt And Pepper

Preparation

1. Cut and dice onions and garlic. Prep your mixed veggies by thawing them. Dice the Spam as well. Set these aside.
2. Beat eggs in a small bowl. Set aside.
3. Cut up kimchi. Set aside.
4. Heat a skillet or wok over medium heat and add the oil. Once the oil is hot, add the kimchi, onions and garlic and fry them in the sesame oil until onions are translucent. Toss in the diced Spam.
5. Once you smell the aroma of the garlic and onions, add the cooked rice and frozen mixed vegetables. Add the kimchi juice, soy sauce and sriracha and mix to combine everything.
6. Push the rice mixture to the side and add the beaten eggs. Cook until the eggs are solidified then mix thoroughly with the rest of the mixture. Add salt and pepper to taste and serve on a plate.
