Description

A corn souffle made with jalapenos and Monterey Jack cheese.

Ingredients

  • 12 ounces, weight Canned Sweet Corn
  • 12 ounces, weight Canned Creamed Corn
  • 1 whole Jalapeno Pepper, Washed, Stem And Seeds Removed, Then Minced
  • 3 Tablespoons All-purpose Flour
  • 1 cup Sour Cream
  • 1 whole Egg, Beaten
  • 1 Tablespoon Salt
  • ½ cups Shredded Monterey Jack Cheese

Preparation

Preheat oven to 350 F and spray a 9X9 glass baking dish with cooking spray. Set aside.

Combine everything in a large mixing bowl and pour the mixture into the prepared baking dish. Bake for 45-55 minutes until slightly browned on top and bubbly.

The longer you bake this, the firmer it gets. So depending on your preference you could make it soft and mushy or firm and bread-like.

Tried this tonight with fried chicken and it was wonderful! I used corn meal instead of flour and canned chilies rather than fresh because its what I had on hand. It was awesome. Thanks for sharing!

This is an excellent alternative to any starchy side and so much more flavorful with a nice balance of sweet and spicy. It makes a HUGE batch… think I’ll try to freeze the rest.
