Description

These grilled prosciutto-wrapped asparagus are the perfect side dish for any summer meal.

Ingredients

  • 1 clove Garlic
  • ⅓ cups Balsamic Vinegar
  • 2 Tablespoons Dijon Mustard
  • ¼ teaspoons Each Kosher Salt And Black Pepper
  • 24 spears Asparagus, Snapped
  • ½ cups Extra Virgin Olive Oil, Plus Extra For Drizzling
  • 8 slices Very Thinly Sliced Prosciutto, Cut In Thirds Lengthwise

Preparation

Make vinaigrette by whisking garlic, vinegar, mustard, and salt and pepper in a 2-cup Pyrex measuring cup. Slowly whisk in oil until you reach the 1-cup mark.

Drizzle asparagus with olive oil and sprinkle with salt and pepper.

Working one spear at a time, roll each one in a piece of prosciutto.

Grill over direct heat on a charcoal or gas grill turning them only once until prosciutto is crisp and the asparagus are crisp-tender, 5 to 6 minutes.

Arrange spears on each plate and drizzle with balsamic vinegar or vinaigrette. Serve immediately.

Oh-my-gawd!!!! SOOOO good with or without dressing! I’m addicted. Dressing could be 1/2 but it keeps in fridge nicely for quite a while so I use it on other things too.

I agree with the above review- the vinaigrette can definitely be cut in half- I had an abundance left over! I think broiling it would actually work better than grilling as the prosciutto had a rough time staying on the asparagus on the grill. It didn’t look very pretty but tasted amazing!! Will definitely make again and again!

I also made for my extended family..and dito WOW!
Very good- love the Prosciutto. My first time using it. So much thinner than bacon.
I’d say you could cut the vinaigrette in half or else they’d still be good without it.
I didn’t have a grill handy so I used a broiler pan and broiled in oven. Worked fine. Very crisp!
