Fat-free Sweet Potato Souffle

Ingredients
- 3 whole Medium Sweet Potatoes, Peeled, Cooked
- 3 whole Packages Sweetener
- 4 whole Egg Whites
- ¼ teaspoons Salt
- ½ teaspoons Nutmeg
- ¾ cups Canned Peaches, Drained, Pureed
Preparation Instructions
Preheat oven to 350ºF.
Peel and cook sweet potatoes. Drain and mix smooth with hand mixer.
Add sweetener, whites, salt and nutmeg. Mix well.
Puree peaches in blender. Add peaches to the sweet potatoes and mix well.
Divide into 6 lightly greased ramekins. Bake at 350ºF for 30 minutes.
Note: to me, medium sweet potatoes are about 4”-5” long and about 2” across.
