Description

This rice dish is easy and delicious.

Ingredients

  • 4 whole Limes, Divided
  • 3 cups Water
  • 3 cups Minute/instant Rice
  • ¼ cups Chopped Cilantro
  • 2 Tablespoons Peanut Oil
  • ½ teaspoons White Sugar
  • ¼ teaspoons Salt

Preparation

Zest 2 of the limes, add half of the zest to the water you are going to cook the rice in and reserve the other half. Juice 1 lime and also add to the water for the rice. Cook rice according to directions on the package.

In a mini food processor, pulse cilantro leaves, oil (you don’t have to but I find a little helps), juice from the other 3 limes, lime zest, sugar and salt (you can also do this in a mortar and pestle and it will impress the heck out of your guests) into a fine mixture. Pour over the rice and stir well.

If you want to make this spicier, you can add chopped green chilis and black pepper to taste.

This goes great in a burrito or salad with the barbacoa recipe, some garlic black beans, sauce and cheese.

Easier still, put a lime or 2 in a blender, blend well (may add a sprinkle of water)–use a scant teaspoon when a recipe calls for juice and zest. Do same with lemon, and orange. (Haven’t tried it yet with grapefruit.)

Made this last night for a Mexican themed dinner and LOVED IT! The only thing I would add is maybe more salt. I didn’t have peanut oil (allergy alert), so I substituted canola oil and it worked out great. I will be making this again soon.
