Description

Sweet, dried cranberries and chopped pecans shake up this yummy grain dish!

Ingredients

  • 12 ounces, weight Uncooked Quinoa
  • 4 cups Reduced-sodium Chicken Stock
  • ½  Red Onion, Thinly Sliced
  • 4 ounces, weight Goat Cheese
  • ½ cups Dried Cranberries Or Cherries
  • ½ cups Chopped Pecans
  • 2 Tablespoons Balsamic Vinegar

Preparation

Follow the instructions on the box to cook the quinoa, but replace water with chicken stock. When all the liquid is cooked out and quinoa is cooked, dump it in a large bowl with the onions, goat cheese, cranberries, pecans and balsamic vinegar. Mix it all together and serve warm.

I just recently discovered quinoa and am keeping an eye out for new recipes. This one looks like it will be delicious, especially with the cranberries! Also, could be a tasty cold salad don’t you think? May try with the leftovers, if I have any :)
