Description

There is no better way to eat squash that covered in cheese and breadcrumbs and pan fried. Trust me.

Ingredients

  • 3 whole Medium Summer Squash Or Zucchini
  • ¾ cups FRESH Breadcrumbs (They Must Be Fresh)
  • ¼ cups Shredded Cheddar
  • 2 dashes Salt And Pepper
  • 2 whole Eggs, Beaten With A Little Water
  • ½ cups All-purpose Flour
  • ½ cups Oil For Frying, I Used Bacon Grease

Preparation

Slice the squash into 1/4 inch thick slices.

Mix together breadcrumbs, cheese and salt and pepper together on a plate.

Place the egg and flour on separate plates.

Heat your oil (I use bacon grease) in a skillet over medium high heat. It should be about a 1/4 inch deep.

To bread the squash, dip first in egg, then flour, then egg again, then breadcrumbs.

Gently place in oil and fry until golden brown on each side, 3-4 minutes.

Drain on paper towels. Serve and enjoy!

I tried it today and it is awsome!
The 2nd batch I subsituted saltine cracker crumbs for the bread crumbs,it was amazing too! Thank you!

This was really good, but quite labor intensive. I didn’t have enough breadcrumbs for my squash, and I couldn’t really taste the cheese.
