Combine all prepared veggies in a bowl and drizzle with olive oil. Salt and pepper to taste. Toss veggies to coat with oil. Transfer to an 8″ x 8″ baking pan. (I find the metal pans work best for caramelization.) Roast at 450 degrees for 30-40 minutes or until browned at the edges.
