Description

A grown up mac and cheese that will make you fall in love with this classic comfort food. Plus, the kids will love it too!

Ingredients

  • 16 ounces, weight Elbow Macaroni
  • 4 Tablespoons Butter
  • 2 cups Skim Milk
  • ½ cups Flour
  • 2 cups Heavy Cream
  • 1-½ teaspoon Salt
  • ¾ teaspoons Ground Black Pepper
  • ½ teaspoons Dry Mustard
  • 1 Tablespoon Worcestershire Sauce
  • ½ pounds Gruyere Cheese
  • 1 pound Cheddar Cheese
  • 26 whole Ritz Crackers, Divided

Preparation

Prepare macaroni noodles according to package directions. When done, drain it and set aside.

In large pot, melt butter over medium heat. Add skim milk and bring to near boiling over medium high heat. Reduce heat to medium and sprinkle in flour. Whisk vigorously over medium heat for 1-2 minutes. Mixture should be thick and boiling. Slowly add cream, while whisking. Add in salt, pepper, dry mustard and worcestershire sauce. Reduce heat to low and continue to stir for about 5 minutes.

In food processor, shred Gruyere and cheddar cheese. Add to pot, stir until thoroughly combined and melted.

Add cooked macaroni to cheese mixture. Pour into a 13×9 dish.

In a large Ziploc bag, add 16 Ritz crackers, seal bag and crush the crackers. Sprinkle over top of macaroni. Lay 10 crackers on top of the casserole, spaced evenly.

Bake in a 375 degree F oven, uncovered, for 30 minutes. Enjoy hot!

Aimee – in step 2 you add the milk before you make the roux, is this correct? I always make the roux firts and add cold milk (prevents lumps) Just looking forclarification. Can’t wait to try. Thank you!

I’m a little confused. Do add flour to butter and then skim milk? In the directions it doesn’t say when to add flour. Looks great.

This is really fantastic. Other than a brief freak out over the amount of cheese being used (that I would soon be consuming), it was easy to make and extremely delicious. Highly recommended.

I agree. Best Mac and cheese ever (so far). I didn’t have gruyere so I used maasdam (Swiss).

Made this to go with our Thanksgiving dinner. My son, who is addicted to macaroni and cheese, took one bite and exclaimed that it was “the best macaroni and cheese in the world!” It’s great and definitely kid approved!
