Description

A delicious healthy side dish that pairs perfectly with fish, chicken, pork or beef. It is also great to bring to gatherings and transports well!

Ingredients

  • 1 Tablespoon Olive Oil
  • 1  Onion, Diced
  • 4 cloves Garlic, Minced
  • 2-½ cups Low Sodium Chicken Stock
  • ½ teaspoons Sea Salt
  • 1 teaspoon Each: Pepper, Garlic Powder, Onion Powder, Thyme
  • 1 cup Brown Basmati Quick Cooking Rice (I Used Trader Joe's)
  • 2 whole Carrots, Diced
  • ½ cups Mozzarella Cheese, Shredded
  • ½ cups Parmesan Cheese, Shredded
  • 1 cup Peas, Heated

Preparation

Preheat oven to 450 F. Spray an 8×8 pan, or round baking dish with cooking spray. Set aside.

In a medium sized saucepan add oil, onion, and garlic. Let it cook over medium high heat for 2 minutes. Add in chicken stock, salt and all of the spices. Bring to a simmer.

Add in rice and carrots. Cook according to the rice package directions. I cooked mine about 15 minutes, or until liquid was absorbed and rice was tender. Taste and adjust seasonings if needed.

Once rice is cooked and liquid is absorbed, place rice mixture into the prepared baking dish, top with mozzarella and Parmesan cheese. Bake about 15 minutes until cheese is golden and bubbly.

Remove from oven, top with peas, and serve! Enjoy!
