For the dressing:
Smash the pomegranate seeds to release the juices and then discard the seeds. Add orange zest and juice to the pomegranate juice. Add balsamic vinegar, olive oil, and salt, and mix well.
For the salad:
Combine the chopped orange segments, kale, pomegranate seeds, pine nuts, and goat cheese in a bowl and mix well.
Drizzle with dressing and enjoy!
