Make several thin long slices of the carrot using a peeler. Prepare the rest of the vegetables. Toss all of the salad ingredients except the cranberries into a bowl and stir everything together.
Prepare the dressing. Just stir all the ingredients until smooth, and season with additional salt and pepper if needed.
Pour the dressing over the salad, stir to combine, and sprinkle with cranberries.
