Deliciously orange and lemony chicken with surprisingly tasty lentils. (Who knew lentils could be so tasty? I thought lentils were just for vegans.) If you don’t have a whole chicken, you could use chicken pieces (thighs, drumsticks etc) with skin on, bone in.
This is such an easy and delicious recipe. The tamarind sauce can be used with any other grilled food (chicken, tofu, you get the drift). Blocks of tamarind can be found in Asian markets (or online). This is a recipe from Epicurious.
I personally can not stand eggs or raw onions, so I leave them out, but I know most people don’t think a potato salad is complete without them. But for goodness’ sake, don’t leave out the bacon! Try the dressing on a macaroni salad as well.
