A perfect whole grain little muffin that goes great with BBQ baked beans or even slathered with jam for breakfast!
Based on pearl pasta (also known as Israeli Couscous or Ptitim) this is a lovely pasta salad that will keep well in the heat and makes a great picnic dish or a lunch to go. All measurements are approx. – feel free to improvise until you’re completely happy!
I had this dish at a party last year and have been making it almost weekly (through the summer) since. The sweet corn pairs wonderfully with smoky bacon and the peppery arugula. I have grilled, boiled and roasted the corn and they all turn out delicious, though we prefer the roasted corn flavor. You can add more or less vinegar to taste and the cumin or sweet paprika are optional.
It sounds sacrilegious to make something so decadent out of something so…not. But trust me, you hardly miss the cream and butter in this recipe, and you definitely won’t miss the calories! Tofu needs a lot of seasoning to so my measurements are not an exact science, so feel free to correct me if this dish needed a little more…or a little less!
