You may be saying, “I’ve never heard of Chickini before!” Well, good, because I made that word up tonight to describe this delicious recipe passed down from my mother that uses up all those garden zucchini and tomatoes. Chicken + Zucchini = Chickini. Ah, it’s love!
I had to make a chocolate cake for a birthday party, so I combined 3 different recipes and came up with this: a moist chocolate cake with a hint of cinnamon, layered with chocolate cream cheese icing and covered in dark chocolate ganache. It was a screaming hit and even though I don’t even like cake, I craved it for days afterward.
