I like to use a rotisserie chicken from the grocery deli for this recipe. I always use the leftover chicken for something. Easy to make and a really good “prepare ahead dish” — prepare the soup mixture and refrigerate, then put together the enchiladas, cover, refrigerate until time to bake. This one always gets rave reviews from guests!
