Basic Breakfast Potatoes

Called Breakfast Potatoes by some, Skillet Potatoes by others, they can be enjoyed in their simplest form or dressed up in any number of ways to suit whatever you’re doing.

White Chicken Enchiladas

I like to use a rotisserie chicken from the grocery deli for this recipe. I always use the leftover chicken for something. Easy to make and a really good “prepare ahead dish” — prepare the soup mixture and refrigerate, then put together the enchiladas, cover, refrigerate until time to bake. This one always gets rave reviews from guests!
