This salad is fantastic. The bold flavors meld together perfectly for a very satisfying dish. I think it would be perfect for a summer potluck or a side dish for any number of things, like grilled chicken, steak or even shrimp. My favorite way to eat this salad though? Make a batch and eat it stuffed inside a whole wheat pita for lunch all week long.

What better way to celebrate fall than with a moist and comforting apple-filled cake? This recipe is also great to make ahead, as the brown sugar yields a cake that remains moist and tender. Serve for breakfast or as a lovely midday snack. Makes one 9″ cake.

These are simple to make on a busy weeknight and delicious. Who knew the mixture of tuna, apple, swiss cheese and celery could be so good!? I don’t even like tuna, but love it in these sandwiches!

Pepitas, or roasted pumpkin seeds, are a delicious seasonal snack. Unlike sunflower seeds, whose outer shell you must remove before eating, you can just pop ‘em in your mouth and eat ‘em whole.
