Heat 1 tablespoon of oil in a wok or skillet on medium-high heat. Add turkey and stir-fry ground turkey with a dash of salt, breaking the turkey apart, until browned. Remove turkey from the skillet and set aside.
Add mushrooms into the skillet and cook for 2-3 minutes, then tip in the corn and stir fry for another minute. Add salt and 1/3 cup water and simmer, stirring occasionally, until the water has evaporated.
Turn heat up to high, add pork back into the skillet and stir-fry a little more. Add scallions, white pepper and toss to incorporate.
