- Brown ground meat and drain any fat;
– Add 2 packets taco seasoning mix, plus water called for according to the package directions; Blend well;
– Add beans, corn, & Rotel; Blend well;
– Bring mixture to a boil, then reduce heat to simmer for 10 minutes; remove from heat;
– Stir in half of the shredded cheese, until cheese is melted and completely blended;
Heat oven to 325
Assembly:
– Spray 9×13 pan with pan spray;
– place flour tortillas to cover bottom of pan;
– spread about 1/3 of the meat mixture over the tortillas;
– place another layer of tortillas, then spread another 1/3 of the meat mixture;
– place a third layer of tortillas, and then spread the remaining meat mixture over that;
– sprinkle with the remaining shredded cheese;
– bake in 325 degree oven for 25-30 minutes, until hot & cheese is melted and bubbling;
– let rest for 10 minutes before cutting;
Serve with lettuce, salsa, sour cream, jalapeno or banana peppers, or whatever extras you enjoy with tacos.
