Cook noodles as instructed on package, drain. While noodles are cooking, combine soy sauce, rice vinegar, sesame oil, canola oil, peanut sauce, sugar, garlic, ginger, and hot chili oil and whisk together until thoroughly combined. In a large bowl, pour sauce over noodles and stir gently until thoroughly combined. Add remaining ingredients and combine gently. Enjoy warm or cold.
Notes:
You can cook the chicken yourself or use canned. I prefer to use John Soules fully cooked chicken fajita meat. Just heat in the microwave until warm.
I also use packaged carrot matchsticks to reduce prep time.
