In a large skillet, heat olive oil over medium heat. Add sausage and onion. Cook, stirring occasionally to crumble sausage. Continue until sausage is cooked through and onion is tender. Stir in garlic; cook 2 minutes more. Add mushrooms and peppers, stir to combine, then add spinach. Cook until spinach is just wilted. Stir in rice, mix well to combine and continue cooking until heated through.
