Preheat oven to 325.
In a bowl, mix the first 5 ingredients.
Brush the roast generously with the honey mixture. Place the roast on a rack in a roasting pan.
Cook for 90 min. Remove from the oven and let stand for 5 min. Slice the roast and baste each slice with cooking juices.
Remove the rack from the pan and lay the slices in the pan. Put back in the oven for about 10 min.
As I always do with pork recipes I highly recommend using a meat thermometer to determine doneness as you can ruin pork by over cooking it. Hope you enjoy this simple roast.
