Place beef roast in the slow cooker.
Mix the dressing and gravy mixes together, then sprinkle the entire mixture over and around the roast.
Pour water into the slow cooker.
Cook on low for 4 to 6 hours, then (for extra tender meat) switch to high an hour or two before serving.
