Drain and rinse the chickpeas. Add all the ingredients (except bread) to a food processor and pulse a few times. If you don’t have a food processor, first mash the chickpeas in a medium-sized bowl with a fork or potato masher, then add the remaining ingredients and mix well. If using a food processor, after pulsing, use a spatula to push the mixture down toward the bottom and pulse a few more times. You want the consistency to be a little chunky.
Refrigerate until ready to serve on your favorite sandwich bread. Optional garnishes: salad greens, favorite cheese slices, tomato slices, avocado.
