Preheat oven to 375F. Place chicken in a glass baking dish, season with salt and pepper, and bake for fifteen minutes.
In a small saucepan over low heat, combine all remaining ingredients. Heat, stirring well, until apricot jam is melted. Spoon the glaze over the chicken for the last fifteen minutes of cooking.
