Sprinkle pork medallions with salt and pepper.
In a large skillet over medium high heat, add pork. Sear each side for abut 4 minutes, until all sides are no longer pink.
While the pork is cooking, in a small bowl add apple cider, maple syrup, onion powder and thyme. Mix until combined. Pour mixture into skillet with pork and cover the skillet. Cook for about 7 minutes.
Meanwhile in a small bowl add cornstarch and water; mix until combined.
After 7 minutes, set the pork onto a serving plate and leave the sauce in the skillet. Add cornstarch mixture to the pan and whisk until thick and bubbly, about 2 minutes. Serve pork covered in sauce.
