Description

These tomatoes can be tossed in pasta, topped on pizza and used whenever a recipe calls for sun dried tomatoes.

Ingredients

  • 4 cups Cherry Tomatoes
  • ¼ cups Olive Oil (reserve 1 Tablespoon)
  • 1 teaspoon Sea Salt
  • 1 teaspoon Garlic, Minced
  • 12 leaves Fresh Basil
  • 1 Tablespoon Balsamic Vinegar
  • Freshly Ground Pepper, to taste

Preparation

Preheat oven to 300 degrees. Line a cookie sheet with a silicone baking mat. Halve tomatoes. Place tomatoes on silicone baking mat and drizzle with olive oil (reserve 1 tablespoon for later use). In a small bowl, mix the reserved olive oil, salt, garlic, basil and vinegar. Place in a mini food processor and blend. Scrape out and toss with olive oil-drizzled tomatoes. Sprinkle freshly ground pepper across the top of the tomatoes. Bake in the oven for 2-1/2 hours.

I used grape tomatoes and about 6 cloves of garlic and extra olive oil in food processor. Followed the rest of the instructions/ingredients above and spooned mixture on each little tomato. I also spread some red onions on cookie sheet along with the tomatoes. These were done after two hours in my oven. I stored them in a glass jar in my fridge. They are outstanding and full of flavor, hard not to eat them right out of the jar one after the other. Thanks for sharing this recipe!!
