Wash strawberries and gently pat with paper towels until completely dry. It’s important that the strawberries are absolutely dry in order to dip them into the chocolate.
In a microwave-safe bowl, melt white chocolate and shortening at 50% power; stir until smooth. I started the microwave at 3 minutes and stirred every 30 seconds until the chocolate was completely melted.
Stir in the extract. Dip dry strawberries in chocolate mixture; place on a waxed paper-lined baking sheet. Immediately press chocolate chips into the coating for eyes. Freeze for 5 minutes.
In a microwave-safe bowl, melt the remaining chocolate chips and stir until smooth. Dip a toothpick into the melted chocolate and draw a mouth on each face.
