Description

True, the guys won’t line up to sip one of these unless they’re REALLY secure, but the flavor is great. And I’ll bet you if you leave one sitting on the counter, you’ll find it disappears. Watermelon, lime, mint and rum provide a super refreshing way to chill out big time. While I prefer them only slightly sweet, you can adjust that by adding (or subtracting) more simple syrup!

Ingredients

  • 4 cups Seedless Watermelon, Cubed And Frozen
  • ½ cups Lime Juice
  • ⅓ cups Simple Syrup
  • 1 cup Golden Rum
  • ½ cups Seltzer Water, More Or Less, If Needed To Thin Out The Drink

Preparation

Add all ingredients to your blender, make sure your lid is firmly in place and blend on HIGH until smooth. Pour into chilled glasses and serve immediately. Yields between 1-4 drinks, depending on how bad your day was.

terriab- I usually do a mint simple syrup. I can’t believe I forgot to add that to the recipe!

1 cup sugar
1 cup water
1 cup mint leaves

Combine water and sugar in a heavy saucepan with a tight fitting lid over medium high heat. Stir until sugar is melted. Bring to a boil and then turn off the heat. Remove the pan from the burner, add the mint leaves, stir, cover tightly and let steep for 1 hour. Strain after the hour is up into a clean jar. Lid tightly and refrigerate. Use after thoroughly chilled. This lasts in the refrigerator for up to 2 months after being made.
