Description

Overnight pumpkin oatmeal is layered with banana soft serve in a gorgeous breakfast parfait!

Ingredients

  • ⅓ cups Old Fashioned Rolled Oats
  • ⅓ cups 0% Plain Greek Yogurt
  • ⅓ cups Unsweetened Vanilla Almond Milk (or Milk Of Choice)
  • 3 Tablespoons Pure Pumpkin Puree
  • ½ teaspoons Pumpkin Pie Spice (or A Combination Of Cinnamon, Ginger, Nutmeg & Cloves)
  • ¼ teaspoons Pure Vanilla Extract
  • 1 whole Banana, Peeled And Sliced
  • 4 whole Square Whole Wheat Graham Crackers (such As Mi Del)

Preparation

The night before you intend to eat the parfait, combine the oats, yogurt, milk, pumpkin, spices, and vanilla extract in a bowl. Cover with plastic wrap and refrigerate overnight. Also the night before, place the banana slices in a Ziploc bag and freeze overnight.

In the morning, place the frozen banana slices into a food processor (or high-speed blender) and process/blend until smooth and creamy. Place the graham crackers into a plastic bag and crush with a skillet or other heavy item until they turn into coarse crumbs.

Layer the cold pumpkin spice oats with the banana soft serve and graham cracker crumbs.

This was delicious! Although it might be best to use Pumpkin Pie Spice, I only had individual spices and added a lil’ too much ginger. Will try again & thanks for sharing :)
