Description

Apple and peanut butter. Pretty much one of the best combinations ever, right? Why not try it in bar form! A delicious sweet treat!

Ingredients

  • FOR THE COOKIE BASE:
  • ½ cups Peanut Butter
  • ½ cups Honey
  • 2-½ Tablespoons Coconut Oil
  • 1 teaspoon Vanilla Extract
  • 1 cup Flour
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • _____
  • FOR THE APPLE FILLING:
  • 5 whole Apples, Peeled, Cored, And Diced
  • ⅓ cups Flour
  • ½ cups Brown Sugar
  • ½ whole Lemon, Juiced
  • ½ Tablespoons Cinnamon
  • _____
  • FOR THE CRUMBLE TOPPING:
  • ½ cups Flour
  • ½ cups Oats
  • ½ cups Brown Sugar
  • 3 Tablespoons Peanut Butter
  • 3 Tablespoons Coconut Oil

Preparation

Cookie base:
Combine peanut butter, honey, coconut oil (or other oil) and vanilla extract. Add flour, baking soda and salt and stir to combine. Chill in the freezer for about 10 minutes.

Apple Filling:
In the meantime, peel, core and dice the apples. Toss with flour, brown sugar, lemon juice and cinnamon. Let sit for about 10 minutes.

Crumble Topping
In another bowl, combine crumble topping ingredients. Use your fingers until you get coarse crumbs.

Preheat oven to 350F.

Press peanut butter cookie base into a 9 x 13 baking pan. Layer on apple filling, then top with crumble topping. Bake for 30-40 minutes, until edges are golden brown.

I was going to a get together at a vegan friend’s house so I wanted to take something she could eat. Found this recipe, used agave nectar instead of honey, and these were a HUGE hit. Everyone there wanted the recipe! Thanks!

These sound delicious! They are not truly vegan though, as they contain honey. Ooooh – Maple syrup might be a yummy substitution if you want vegan!

These were a little salty (probably from all the peanut butter), but my husband loved them!

These are delicious! I decided to make them because I had pretty much every ingredient sitting around my kitchen and a bunch of apples begging to be put to good use. I followed everything exactly though I think mine bars came out a little more like pie due to the fact that my apples were huge and I still used nearly 5. They firmed up a little once I stuck them in the fridge for a bit. I also used organic almond butter instead of peanut butter just because that’s what I had and it was great. Would totally make these again. Thanks for the great recipe!

These are awesome! I initially thought there were too many apple pieces but the ratio of apple to peanut butter worked perfectly.

Whoa, these are so good! I followed the recipe exactly, but I added a little extra sugar to the apples. I wish I hadn’t now, I think they would have been perfect the way the recipe was stated (mine came out a little sweet, but that’s ok with me!). I left the peels on my apples, and I think it added a great difference in texture. Thanks for the recipe!

Delicious! I took them to a party & everyone wanted the recipe. I did substitute agave nectar for the honey but otherwise followed the recipe.
