Description

Like a snickerdoodle cookie but in bar form! Filled with cinnamon baking chips and sprinkled with cinnamon sugar. You HAVE to make these right now!

Ingredients

  • 2-⅔ cups Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1-½ teaspoon Cinnamon
  • 2 cups Brown Sugar, Packed
  • 1 cup Butter, Softened
  • 2 whole Eggs
  • 1 Tablespoon Vanilla Extract
  • 1 bag Hershey's Cinnamon Baking Chips
  • 3 Tablespoons Sugar
  • 3 teaspoons Cinnamon

Preparation

Preheat oven to 350F. Spray a 9 x 13 pan with baking spray. In a separate bowl, whisk together flour, baking powder, salt, and cinnamon and set aside. In another mixing bowl, beat together butter, sugar, egg and vanilla until light and fluffy.

Stir in the flour mixture until well blended. Dump in the cinnamon chips and mix to evenly distribute.

Spread evenly in your 9 x 13 pan. Combine sugar and cinnamon in a small bowl. Sprinkle cinnamon sugar mixture over the top of the your dough.

Bake 25 minutes, checking to see if center is done. Cool slightly. Cut into bars with sharp knife after cookies have cooled about 20 minutes.

These are absolutely the best. I really don’t care for the Snickerdoodle cookies that much. But these are out of this world! Got the recipe a couple of years ago from my boss & had to just keep pestering her for the recipe until she finally caved in. Everyone loves these!

I should have reviewed this earlier. I have made it first for my daughter and family who love snickerdoodles but I didn’t want to spend too much time in the kitchen. My son-in-law loved it so much, he ate about a third of the pan with vanilla ice cream. They have made it numerous times since (as have I) for guests and themselves. This recipe will FOREVER be one of our family favorites! Awesome! Awesome! Awesome!

So easy to make and so yummy! I did have to cook them an extra 5 minutes and they were still a little undercooked in the center (but I kinda like that anyway!). I will definitely make again…

These were very good. I didn’t love them, but a lot of people at the event I baked them for commented on how good they were. I might be inclined to use half brown and half white sugar next time.

As someone allergic to chocolate and with a child with peanut allergies, I am always looking for other desserts…and these were GREAT! I only wish grocery stores carried cinnamon chips year round here as I have only seen them sold around Christmas and bought a couple of bags then.
