Description

Welcome to the sweet taste of Saturday. In my continued effort to lose weight and watch my diabetes I am always and forever trying to figure out how to still have a small sweet treat every once in a while. I decided to dive right in and make a recipe using my favorite sugar substitute Truvia. It was absolutely delicious. Even The Husband loved it!

Ingredients

  • FOR THE FRUIT FILLING:
  • 4 cups Frozen Unsweetened Peaches
  • 2 Tablespoons Sugar Free Strawberry Jam
  • 2 Tablespoons Sugar Free Tapioca Pudding Mix (powdered Mix)
  • 2 Tablespoons Truvia (or Whatever Sugar Substitute You Cook With)
  • FOR THE TOPPING:
  • ⅔ cups Quick Cooking Oats
  • 2 Tablespoons Flour
  • 2 Tablespoons Brown Sugar
  • ½ teaspoons Cinnamon
  • 2 Tablespoons Butter, At Room Temperature

Preparation

Preheat oven to 350 F. Spray an 8×8 baking dish with cooking spray.

For the fruit filling:
In a large bowl combine frozen peaches, strawberry jam, tapioca pudding and Truvia (sugar substitute). Place the fruit mixture into the prepared baking dish.

For the topping:
In a medium bowl stir together oats, flour, brown sugar (or brown sugar substitute) and cinnamon. Using a pastry blender cut the butter into the mixture until it is crumbly. Sprinkle this evenly over the fruit mixture.

Bake at 350 F for 45 minutes or until fruit mixture bubbles around the edges. Remove from oven and serve warm with your favorite sugar-free whipped topping, frozen yogurt or vanilla ice cream!

Makes 6 servings.

Sounds like a perfect guilt-free treat! Could you use another instant pudding mix besides tapioca? I usually have vanilla on hand.
