Description

Gooey mash-up of an ice cream sandwich and the campfire favorite, s’mores. This S’mores Ice Cream Sandwich is so easy to make and it’s truly delicious!

Ingredients

  • 1 bag Milk Chocolate Chips, 12 Ounce Bag
  • 2 Tablespoons Coconut Oil
  • 4 whole Graham Cracker Sheets (4 Small Rectangles Per Sheet)
  • 1 cup Marshmallow Fluff
  • 4  Scoops Vanilla Ice Cream

Preparation

In the top of a double boiler (with simmering water in the bottom), melt the chocolate chips. Then add the coconut oil and set the bowl aside, off of the heat to cool a little.

Assemble sandwiches. Break graham crackers in half to make 2 squares from each sheet. Spread Marshmallow Fluff on one side of 2 graham cracker halves. Add the small scoop of ice cream on top of one side of cracker, over the Marshmallow Fluff. Top with the other half of graham cracker, marshmallow side-down to make a sandwich and smash down a little. Use a butter knife to cut away/remove excess ice cream from the sides of sandwich. Carefully place the sandwich in the chocolate mixture and coat top and sides using spoon. Pull it out of the chocolate and place it on a wax paper-lined cookie sheet. Put the sheet in the freezer immediately to allow everything to harden. Repeat process with the other sandwiches. Keep these in the freezer until you’re ready to serve.
