Description

This is really easy to throw together and wonderful for breakfast or dessert. It uses only one bowl and one pan.

Ingredients

  • 1 cup All-purpose Flour
  • 1 cup Whole Wheat Flour
  • 1-½ cup Sugar
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1 Tablespoon Cinnamon, Ground
  • ¼ teaspoons Salt
  • 4 whole Eggs, Beaten
  • 1 can Pure Pumpkin (15 Oz)
  • ½ cups Canola Or Vegetable Oil
  • ½ cups Unsweetened Applesauce
  • Powdered Sugar, For Sprinkling (optional)

Preparation

Preheat oven to 350 degrees F.

Whisk together flours, sugar, baking powder, baking soda, cinnamon and salt in large bowl. Add eggs, pumpkin, oil and applesauce and stir just to combine. Pour into an ungreased 9×13″ baking pan and bake for 30 to 35 minutes or until toothpick inserted in the center comes out clean.

Optional: Dust with powdered sugar once completely cooled.

Made this last night at the last minute for a potluck. Its a fabulous simple cake recipe for sure. The cake had great flavor and I loved the spongey texture. I made it extra spicy and loved it… its my new go to pumpkin cake recipe :) Thanks so much.
