Description

These crumbly pumpkin bars are a delicious treat in the fall.

Ingredients

  • 2 cups All-purpose Flour
  • 1-½ cup Quick Cook Oats
  • ¼ cups Packed Brown Sugar
  • 1 cup Butter, Softened
  • 2 cups White Chocolate Chips
  • 8 ounces, weight Cream Cheese
  • 14 ounces, weight Sweetened, Condensed Milk
  • ¼ cups Lemon Juice
  • 1 teaspoon Vanilla Extract
  • ¼ teaspoons Salt
  • ½ cans (15 Oz. Size) Pumpkin
  • ¼ teaspoons Nutmeg

Preparation

Preheat oven to 350 degrees. Grease a 9 x 13 baking pan.

Combine flour, oats, and brown sugar in a large bowl. Add butter and mix until crumbly. Stir in chocolate chips. Reserve 2 1/2 cups for the topping. Press the rest of the remaining mixture in the bottom of the baking pan.

In a mixer bowl, beat softened cream cheese until creamy. Add sweetened condensed milk, lemon juice, vanilla extract, salt and pumpkin. Mix until smooth. Pour the mixture over the crust. Sprinkle remaining flour mixture over the cream cheese mixture. Sprinkle nutmeg over the top. Bake for 35-40 minutes.

Cool completely in the pan on a wire rack. Slice into bars and enjoy.

P.S. We could not wait until they were completely cool. They were divine warm!

Love this!!! Easy and awesome! I love the white chocolate chips in it. Everybody loved it and came back for more. It tastes great warm or chilled.

DEEEEE-LISHHHHHHH! Man! Yummy! Was worried with no eggs it would not set up, so I added one. Did not have white choc chips so I just left them out. Not sure I would even put them in next time, it was great as is. Made it for a home party yesterday, had a bit of whipping cream left so whipped that up with a bit of pwdr sugar and put a dolop on top. Went over HUGE.
